August has been incredibly hectic so given I haven’t posted anything all month, I promise that I will be making up for it in September! This year, I have spent more time trying out new recipes and ideas in the kitchen so I thought it would be time to do something a little bit different and share my first recipe post. Trust me – this is very easy to make!
When I was recently given a jar of the Deadset Delicious Chilean Aji from Homegrown Sauce Co to trial, so many ideas came to mind.
The founders of Homegrown Sauce Co, Carolina and Joel, created the brand as a means of introducing this type of salsa to Australia. It’s something that can usually be found in most Chilean households and is incredibly versatile – not to mention it is vegan and gluten free.
Whilst lovely as a condiment, I found that the Chilean Aji was fantastic when used as a marinade. For something like grilled chicken, all that was needed was few spoonfuls of the salsa to some chicken breast fillets to give it a delicious spicy and zesty kick.
CHILEAN AJI CHICKEN TACOS
Ingredients
Chicken
2 chicken breast filled (250gm each)
3 tbsp of Deadset Delicious Aji Salsa
Simple guacamole
1 avocado
1 tbsp lime juice
1/2 tbsp salt
Ground black pepper to taste
INSTRUCTIONS
Cut the chicken into 2cm wide strips. Add the chicken strips to a mixing bowl and add 3 tablespoons of salsa. Mix until all the chicken pieces are covered and set aside for 30 minutes.
Whilst waiting for the chicken to cook, prepare the toppings. Most of my toppings were based on what I had in the pantry so the possibilities are endless. I made a simple guacamole and added some grilled corn and diced tomato.
Once the chicken has been marinated, heat a grill pan and grill the chicken until it has slightly charred on both sides.
